Watermelon & Cherry Tomato Salad
Ingredients
- 1 pint cherry tomatoes, halved (or 1 ½ cups tomatoes, seeded & cut into bite-sized pieces)
- 2 cups watermelon, seeded & cubed
- 1 small cucumber, cut into cubes
- 1 large avocado, cut into cubes
- 1 small red onion, thinly sliced (about ½ cup)
- 3 Tbs chopped fresh herbs, in any combination: basil, dill, chives, mint, cilantro, parsley
- 3-6 Tablespoons fresh lemon juice or balsamic vinegar (to taste)
- 1 teaspoon ground coriander
- 1-2 teaspoons maple syrup or honey (optional)
- sea salt and freshly ground black pepper to taste
- 3 cups fresh arugula leaves, romaine lettuce or small watercress sprigs
- ½ cup sliced almonds
Instructions
- In a large bowl, combine the tomatoes, watermelon, cucumber, avocado, onions and herbs.
- In a small bowl, whisk together the lemon juice/balsamic vinegar, coriander, maple syrup/honey, salt and pepper.
- Pour dressing over the tomato-watermelon mixture and toss to coat evenly.
- Adjust the seasoning to taste.
- Serve over greens and sprinkle almonds on top.
