Watermelon & Cherry Tomato Salad

Ingredients
  

  • 1 pint cherry tomatoes, halved (or 1 ½ cups tomatoes, seeded & cut into bite-sized pieces)
  • 2 cups watermelon, seeded & cubed
  • 1 small cucumber, cut into cubes
  • 1 large avocado, cut into cubes
  • 1 small red onion, thinly sliced (about ½ cup)
  • 3 Tbs chopped fresh herbs, in any combination: basil, dill, chives, mint, cilantro, parsley
  • 3-6 Tablespoons fresh lemon juice or balsamic vinegar (to taste)
  • 1 teaspoon ground coriander
  • 1-2 teaspoons maple syrup or honey (optional)
  • sea salt and freshly ground black pepper to taste
  • 3 cups fresh arugula leaves, romaine lettuce or small watercress sprigs
  •  ½ cup sliced almonds

Instructions
 

  • In a large bowl, combine the tomatoes, watermelon, cucumber, avocado, onions and herbs. 
  • In a small bowl, whisk together the lemon juice/balsamic vinegar, coriander, maple syrup/honey, salt and pepper. 
  • Pour dressing over the tomato-watermelon mixture and toss to coat evenly. 
  • Adjust the seasoning to taste. 
  • Serve over greens and sprinkle almonds on top.
