Strawberry Avocado Salad

Salads are refreshing on a warm summer day, especially when strawberries are local and in season.

This insanely flavorful salad will not only satisfy your taste buds, but packs a nutritional punch. It’s quick and easy to make in under 10 minutes so when hunger strikes you’ll be able to start enjoying it in little time. The dressing is only two ingredients and doesn’t require any mixing, you’ll just top your salad when you have completed assembling it, mix and eat.

Strawberries are a sweet, delicious fruit and a nutritional powerhouse.

Packed with vitamins A, B-complex, C, and E, as well as minerals like manganese, iron, and zinc, they are rich in antioxidants that help rebuild, repair, and rejuvenate the body.

Strawberry Avocado Salad

Course Salad
Servings 1 person

Ingredients
  

  • 3-4 cups spinach, packed loosely
  • 1 cup strawberries, chopped
  • 1/2 medium Avocado, sliced
  • 1/8 cup Red Onion, chopped
  • 1/2 medium Cucumber, sliced
  • 1/4 cups Pecans, chopped

Dressing:

  • 1 wedge lime
  • t tbsp honey

Optional Ingredients:

  • 1 tsp basil, fresh and chopped
  • 5 cherry tomatoes, halved
  • 1 tsp sesame seeds 

Instructions
 

  • Prepare salad ingredients and assemble in a bowl.
  • Squeeze lime wedge over salad.
  • Drizzle honey over salad.
  • Salt and pepper to taste.
  • Gently toss until evenly combined and enjoy.
