Apple-Pumpkin Vampire Bites

Super fast and easy to whip up, these healthy bite-sized morsels are perfect for trick-or-treaters or a snack any time! They’re gluten and sugar free while full of delicious nutrition.

Apple-Pumpkin Vampire Bites

  • 4 apples chopped (with skins)
  • 1 cup rolled oats 
  • 1 cup pumpkin puree, unsweetened 
  • ¼ cup date paste or maple syrup
  • Juice from ½ lemon (approx. 1 TBS)
  • ½ tsp vanilla powder (or extract)
  • 2 tsp ground cinnamon 
  • ¼ tsp ground nutmeg 
  • ¼ tsp ground ginger
  • ¼ tsp ground cardamom 
  • ¼ tsp ground cloves
  1. Preheat oven to 350°.

  2. Place bite-sized chopped apples on a baking sheet lined with parchment paper and cook for 15 minutes or until soft. Remove and set aside to cool.

  3. Add cooked apples to a large bowl. Using a masher, gently and slightly break them down until they release a small amount of liquid. 

  4. Fold in the remaining ingredients and combine well. 

  5. In a 12-cup muffin tin lined with parchment cupcake liners or a silicone pan, separate the batter equally into each cup. 

  6. Press down to solidify so the batter ingredients stick together and form muffin bites. 

  7. Bake for twenty minutes.

  8. Remove from oven and cool completely before removing from pan.
