Apple-Pumpkin Vampire Bites

Super fast and easy to whip up, these healthy bite-sized morsels are perfect for trick-or-treaters or a snack any time! They’re gluten and sugar free while full of delicious nutrition.

Apple-Pumpkin Vampire Bites

Ingredients
  

  • 4 apples chopped (with skins)
  • 1 cup rolled oats 
  • 1 cup pumpkin puree, unsweetened 
  • ¼ cup date paste or maple syrup
  • Juice from ½ lemon (approx. 1 TBS)
  • ½ tsp vanilla powder (or extract)
  • 2 tsp ground cinnamon 
  • ¼ tsp ground nutmeg 
  • ¼ tsp ground ginger
  • ¼ tsp ground cardamom 
  • ¼ tsp ground cloves

Instructions
 

  • Preheat oven to 350°.
  • Place bite-sized chopped apples on a baking sheet lined with parchment paper and cook for 15 minutes or until soft. Remove and set aside to cool.
  • Add cooked apples to a large bowl. Using a masher, gently and slightly break them down until they release a small amount of liquid. 
  • Fold in the remaining ingredients and combine well. 
  • In a 12-cup muffin tin lined with parchment cupcake liners or a silicone pan, separate the batter equally into each cup. 
  • Press down to solidify so the batter ingredients stick together and form muffin bites. 
  • Bake for twenty minutes.
  • Remove from oven and cool completely before removing from pan.
