Apple-Pumpkin Vampire Bites
Ingredients
- 4 apples chopped (with skins)
- 1 cup rolled oats
- 1 cup pumpkin puree, unsweetened
- ¼ cup date paste or maple syrup
- Juice from ½ lemon (approx. 1 TBS)
- ½ tsp vanilla powder (or extract)
- 2 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground ginger
- ¼ tsp ground cardamom
- ¼ tsp ground cloves
Instructions
- Preheat oven to 350°.
- Place bite-sized chopped apples on a baking sheet lined with parchment paper and cook for 15 minutes or until soft. Remove and set aside to cool.
- Add cooked apples to a large bowl. Using a masher, gently and slightly break them down until they release a small amount of liquid.
- Fold in the remaining ingredients and combine well.
- In a 12-cup muffin tin lined with parchment cupcake liners or a silicone pan, separate the batter equally into each cup.
- Press down to solidify so the batter ingredients stick together and form muffin bites.
- Bake for twenty minutes.
- Remove from oven and cool completely before removing from pan.
